The modern buffet gained popularity during the 18th century, but its true origins date back even further to the 16th century with a Scandinavian tradition known as “Brannvinsbord.”

Brannvinsbord was a Swedish style of communal dining that originated from the lifestyle of the Vikings—seafaring people who traveled vast distances for trade and exploration. When they returned from their journeys, food was laid out generously on long tables, allowing everyone to eat freely and abundantly as a form of celebration and togetherness.

This spirit of sharing and abundance became the foundation of what would later evolve into buffet dining.

From France to the Word “Buffet”

The French later adapted this communal dining concept, and it became widely known in 18th-century France.

The word “buffet” originally referred to the sideboard or table where dishes and cutlery were placed for guests to serve themselves.

Over time, “buffet” came to define a dining experience centered on freedom of choice, variety, and the idea of
“one price, unlimited enjoyment.”

The Arrival of Buffet Dining in Thailand

In Thailand, buffet dining was introduced several decades ago but was not immediately popular.

Historical records suggest that one of the earliest buffet-style meals took place in 1975 at a building behind the House of Representatives, hosted by Mr. Prasit Kanjanawat.

Soon after, buffet dining appeared again during the celebration of India’s Independence Day at the Regent Hotel Pattaya. From these early beginnings, buffet dining gradually grew into a widely embraced culture and is now a familiar and beloved dining option across the country.
